Minestrone Salad
Makes 12 servings

Ingredients:

  • 1 (12 ounce) package bow ties pasta, cooked and drained
  • 1 (15 ounce) can RED GOLD® KIDNEY BEANS, drained and rinsed
  • 1 (3.5 ounce) package sliced pepperoni
  • 2 (14.5 ounce) cans RED GOLD® PETITE DICED TOMATOES with GARLIC & OLIVE OIL, drained
  • ½ cup chopped green bell pepper
  • ¼ cup chopped fresh parsley
  • ¼ cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 1 (8 ounce) bottle roasted red pepper Italian with Parmesan or Italian
    dressing

Directions:
In a large bowl combine all ingredients; mix well. Serve salad immediately or
cover and refrigerator until serving time.

Cooking Hint:
Any medium-sized pasta can be used in place of the bow ties pasta.
